The open-source kernel modules will only be available for select newer GPUs, while older architectures like Maxwell, Pascal, and Volta must continue using proprietary drivers. For mixed deployments with older and newer GPUs in the same system, Nvidia recommends continuing to use the proprietary driver for full compatibility. "The parts of Nvidia's GPUs that interact with the broader Linux system are open, but the user-space drivers and firmware are none of your or the OSS community's business."
